The curry tree (Murraya koenigii) is a highly aromatic subtropical tree belonging to the citrus family (Rutaceae). Native to the Indian subcontinent and Southeast Asia, it is most famous for its pungent, glossy green leaves, which are a culinary staple in South Asian  cuisines. When the pinnate leaves are bruised or fried in oil, they release a rich, complex aroma reminiscent of citrus, anise, and lemongrass. It is important to note that this plant is the source of fresh curry leaves and is unrelated to commercial "curry powder" (which is a dry spice blend) and the ornamental Helichrysum italicum (curry plant).
